Main Chef Zhang has a natural gift for cooking. Chef Zhang is originally from Shandong, the province which is the most influential in Chinese cuisine. A very talented chef, Zhang worked in Chengdu restaurants for 2 years, and then in Beijing restaurants for a further 10 years. He has been working in Ginkgo from the first day he arrived in New Zealand. Zhang is a specialist in Sichuan and Dongbei cuisine and you really must try his special dessert, the toffee-covered apple slices! After work he enjoys watching kung-fu movies.
Chef Xiao from Sichuan province has been in New Zealand for about 4 years. He graduated as a chef in Chengdu, the key area for Sichuan cuisine which ranks first among the four main schools of Chinese cuisine. XiaoÒs specialty is roasting duck, which he learnt in China from a very famous Hong Kong chef. He worked in a five-star restaurant in Chengdu for many years.
Chef Xiao is the one of the few chefs happy to cook using traditional recipes and he is responsible for creating the Sichuan entrées. After work he enjoys listening to music and carving traditional stone seals.
My name is Les and I am responsible for marketing the restaurant. If you come at lunchtime you may see me, as I enjoy the food so much I eat there every day. In the early days I was a very conservative Kiwi, so it took me a while to get used to the different tastes; but now I look forward to every meal. This gives me an opportunity to meet and talk to new customers, and I have also learnt to appreciate the very distinctive tastes that Ginkgo offers.
Sueann - Ginkgo is my new baby! I have had a lot of fun getting the restaurant started, especially designing and decorating the restaurant using authentic Chinese furniture and decor, and I am happy to keep a finger on the pulse in Ginkgo as an occasional hostess. Through Ginkgo I have made a lot of local and international friends.
At Ginkgo we offer delicious authentic dishes prepared from scratch by our own chefs. I like the customers to experience and enjoy the food which is prepared individually when ordered. I see Ginkgo as a window for people to learn more about the diverse riches of Chinese culture. Our team is proud to maintain very high standards, and we love crafting new menus to create wonderful surprises for our regular diners.
